Malt Process

Incoming grain is received at moisture levels of between 10% and 12%. Every load is sampled, inspected and tested at the intake point. Once tipped the grain is cleaned through imported screeners to remove stones, foreign objects, dust and straw. Once the dressing and drying processes are complete, the grain is stored in silo.

There are five stages in the process of converting barley into malt. The Malt Company India Pvt. Limited Produce the best malt by following step.
Malt Process

Malt Extraction Process

MILLING, MASHING & FILTRATION
The whole grain is crushed through a hammer mill to produce a grist.
This flour, together with hot water, is fed into a Mash Conversion Vessel (top) where the temperature is carefully controlled to ensure that the starch is converted into sugars which dissolve in the water.
The mash is then transferred to a Meura Mash Filter (opposite) where the liquid, called wort, is separated from the remaining malt husk.

Evaporation
The wort is fed into a series of multi stage stainless steel falling film evaporator steps to concentrate it into to a viscous liquid. Evaporation takes place under vacuum in order that lower temperatures can be used. This enables the full flavour and characteristics of the malt extract to be retained. The resultant product is liquid malt extract. This is either packed for dispatch to the customer, or fed to the drying plants and turned into various types of dried malt extract.

Dry Malt Extraction Process

Vacuum Tray Drying
The liquid extract is spread over various trays to form a batch. It is placed in a vacuum oven where it is dried into a solid brittle cake. The cake is then granulated through a mill to produce a free flowing powder. This process is carried out to produce special types of malt extract powder.

Dry Malt Extract is sometimes called DME contains less than 3% moisture and can be properly stored for up to 4 years as per studies. Putting Liquid Malt Extract into a slowly moving band passing through the vacuum makes dried Malt Extract. Drying occurs with the circulation of hot air through this moving bed of material. The vacuum allows evaporation to happen at a lower temperature and aids the extract to puff.

Malt Extracts are rich in Vitamin E, Vitamin B, Folic Acid and Minerals. They are an essential ingredient for the manufacture of nutritious food having high value of Vitamins and Proteins.

Malt Flour Process

HOW MALT FLOUR IS MADE?
The malt is processed through a flour mill. There are different types of mills - roller mills and pin mills for example - each producing different grades of flours. We produce both light and dark flours. The dark flours are produced from malt which has been roasted after the malting process.
The malt flour is further sifted to degrees of refinement.

The dark flours are produced from malt which has been roasted after the malting process. They are used for flavour, texture improvement and appearance enhancement in all areas of the food industry. The malt flour is further shifted to degrees of refinement.

Light colored malt flours offer varying degrees of alpha amylase, protein and malt flavours.
